While trying to find out how to reset a Moodle assignment I found that you can’t even reset the course as a whole! And it looks like I’ll have to recommend that a teacher deletes an assignment and creates it again.

This is disappointing.
I was just reading through a thread about deleting individual assignment submissions: http://moodle.org/mod/forum/discuss.php?d=39189
You can delete an individual assignment by finding the file in the moddata folder in ‘Files’ but you need to figure out the assignment and student ID first. (only the file is removed, so if the assignment had already been graded, the grade and comments would be retained and become associated with the next file!)
There seem to be several people interested in an easy way of acheiving this though judging by the above thread. What I don’t yet understand with moodle is how a feature request like this gets added to a new version (and how long it takes). Looking at the developer documentation it suggests that all developments stem from the Using Moodle forum but I’m not sure how it’s organised / prioritised.
